Recipe 1: Traditional Potato and Cheese Pierogi
Ingredients:
2 cups all-purpose flour
1/2 teaspoon salt
2 large eggs
1/2 cup water
2 cups mashed potatoes
1 cup grated cheddar cheese
1/2 cup finely chopped onion
Salt and pepper to taste
Sour cream, for serving
Instructions:
In a large bowl, combine flour and salt. Add eggs and water and mix until the dough comes together.
Knead the dough on a floured surface for 5-10 minutes until it becomes smooth. Cover with a towel and let it rest for 30 minutes.
In another bowl, mix mashed potatoes, cheese, and onions. Add salt and pepper to taste.
Roll out the dough on a floured surface until it's 1/8 inch thick. Use a 3-inch cookie cutter or a glass to cut out circles.
Place a tablespoon of the potato-cheese filling on one side of each circle. Fold the dough over the filling and press the edges together to seal.
Bring a large pot of salted water to a boil. Drop the pierogi into the water and cook for about 5 minutes or until they float to the surface.
Serve the pierogi hot with sour cream.
Recipe 2: Meat Pierogi
Ingredients:
2 cups all-purpose flour
1/2 teaspoon salt
2 large eggs
1/2 cup water
1 pound ground beef
1/2 cup finely chopped onion
1/4 cup bread crumbs
Salt and pepper to taste
Sour cream, for serving
Instructions:
Follow steps 1-4 of Recipe 1.
In a pan, cook the ground beef and onions until the beef is browned and the onions are translucent. Drain the excess fat.
Mix in bread crumbs and salt and pepper to taste.
Fill each dough circle with a tablespoon of the meat filling. Fold the dough over and press the edges together to seal.
Follow steps 6-7 of Recipe 1 to cook and serve the pierogi.
Recipe 3: Sweet Pierogi with Blueberries
Ingredients:
2 cups all-purpose flour
1/2 teaspoon salt
2 large eggs
1/2 cup water
1 cup blueberries
1/2 cup granulated sugar
1 tablespoon lemon juice
1/2 teaspoon vanilla extract
Sour cream or whipped cream, for serving
Instructions:
Follow steps 1-4 of Recipe 1.
In a pan, combine blueberries, sugar, lemon juice, and vanilla extract. Cook over medium heat for about 10 minutes, stirring occasionally, until the mixture thickens and the berries burst.
Fill each dough circle with a tablespoon of the blueberry filling. Fold the dough over and press the edges together to seal.
Follow steps 6-7 of Recipe 1 to cook the pierogi.
Serve the sweet pierogi hot with sour cream or whipped cream.
